I can't find any documentation that tells me where the avatar picture comes from or how to change it. Your help would be great. Thanks!
wpDiscuz uses WordPress avatar logic, it depends on entered email and based on Gravatar system. wpDiscuz just use WordPress avatar functions. You can manage it on Dashboard > Settings > Discussion admin page, just change the value of the "Default Avatar" option.
