Hi there. We want to completely remove any sort of log in / registration when posting a question. How do we remove this red box and just let the user post their question?

Hi,
This box doesn't have any relation to wpDiscuz plugin. It may either come from the active theme or one of the active plugins.
wpDiscuz has only the "Show “Login” link on comment form" option that has any relation to the login process. You can find and disable it in the Dashboard > wpDiscuz > User Authorization and Profile admin page.
