Is it possible to change the names of badges to customize for our own site?  Instead of Admin, could we use Moderator perhaps?

Sure you can. Just navigate to Dashboard > wpDiscuz > Phrases admin page, find the role and change the value as you like. 

The colors you can change in the Dashboard > wpDiscuz > Settings > User Labels and Badges admin page. More info here:  https://wpdiscuz.com/docs/wpdiscuz-7/plugin-settings/user-labels-and-badges/#comment-author-label-colors-by-user-role
