Hi, we're testing wpDiscuz and i'm trying to understand what data would be available to us in the backend.  (I looked through the documentation and forum but can't find anything about analytics.) Would it be possible to e.g. view/export a list of posts with the number of comments each post got?

The number of comments each post has can be viewed in the Posts list section. There is a comment_count column that displays this information.

Regarding export, you can try searching on Google for something like “export a list of posts with the number of comments in WordPress.”

Additionally, wpDiscuz provides statistics such as Overview & Comments Statistics, Subscriptions, Active Users and Guests, etc. You can find this information on the Dashboard > wpDiscuz > Dashboard admin page.
