Our new theme, like many other modern themes, has an option for the site user to switch between normal (or light) and dark mode at the click of a button. I know wpDiscuz has the ability of choose between light or dark - can you point me to where I can find both sets in one CSS, so we can let the theme switch automatically between the two please

You should use custom CSS code for changing the styles in dark and light modes.
The dark mode has a specific .mode--alt--b class. So you can make the customizations based on it.
